Blockchain, IoT and AI Race to Fix the World's Broken Food Supply Chain
· Source: bioengineer.org
In short
A new systematic review published in Food Science & Nutrition argues that blockchain, the Internet of Things and artificial intelligence, deployed together across the agri-food supply chain, can tackle the roughly one third of global food production that is lost or wasted each year. Screening over 250 records and selecting more than 100 studies from 2017 to 2026, the authors map real-world gains such as Walmart and IBM's mango traceability pilot cutting trace time from seven days to 2.2 seconds, IoT cold-chain monitoring reducing spoilage by 22 percent and AI-driven demand forecasting improving accuracy by 40 percent. The review warns that cost, interoperability, cybersecurity and the 'garbage-in' data veracity problem remain formidable obstacles, and calls for integrated AI-blockchain-IoT platforms, explainable AI, edge computing, federated learning and large-scale pilots.
